This video might be the most hilarious take yet from my unfiltered kitchen! If you make it to the end, you’ll be rewarded with tears of laughter (so I’ve heard).

If you’re new to these, hello! In a nutshell, my two girls (age 4 and 1) and I started making cooking videos during social distancing for Covid-19. We wanted to feature some of our favorite pantry-friendly, easy and wildly delicious concoctions. (Read about how we got started here). It’s a chaotic and comedic experience, and one that all parents can resonate with. If you’re not a parent, that’s ok too! You were someone’s kid once, so now you can identify with your parents when they tried to cook for you, let alone, with you. Right?

However you’re showing up, my intention is to share a fun recipe, a new trick or two, and hopefully some good laughs with you.

Homemade gummies are remarkably easy. They are one of those recipes that make you rethink buying them from the store. On the one hand, they’re so cheap that it’s probably more effort and cost to make them. But on the other hand, when you make them at home you know exactly what ingredients are going into them and the result is pretty satisfying. I mean, YOU MADE CANDY that’s good for you and your kids!

So dive in, and don’t worry about making mistakes. We forgot about our gummies in the freezer overnight, and they turned to sorbet. So we made them again and remembered to take them out after 15 minutes. Case in point. We live and we learn!

Easy, Real Fruit Gummies

Easy, Healthy Real Fruit Gummies with Emma Frisch and Kids, perfect snack for cooking during Coronacation / Covid-19, Pantry-friendly

These are easy, healthy and delicious! I like to blend my own fruit puree using frozen fruit that’s been thawed. Try any combination of fruits; in this variation I used strawberry puree and apricot juice. I only add sweetener if I’m using tart fruit and juice. You can use gummy molds, though it’s not necessary. I use two Non-Stick Silicone Bread Pans and then slice the gummies into small squares or let the kids use small cookie cutters to press shapes.

Ingredients

  • 2/3 cup fruit puree
  • 1/3 cup 100% fruit juice
  • 8 teaspoons grass-fed gelatin
  • 2 teaspoons honey (optional)

Instructions

  1. Make your fruit puree by blending it until smooth. Transfer the puree to a medium or large measuring cup with a spout.
  2. Pour the juice into a small pot over medium-low heat. Add the gelatin while whisking constantly, bringing the mixture to just below a simmer so that it is warm, not scorching. You want the gelatin to completely dissolve, and depending on the juice you’re using, the mixture will be milky or clear.
  3. Pour the juice mixture into the puree and whisk to combine. 
  4. Pour the gummy mixture into the bread pans (or molds) and transfer to the freezer for 15 minutes. Set a timer!
  5. After 15 minutes, pull the gummies from the freezer and cut as desired.
  6. Store in an airtight container in the refrigerator for up to 2 weeks.
