Cranberry Sauce Muffins

Ingredients

  • 1.5 cups whole wheat pastry flour
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1.5 cups of leftover cranberry sauce
  • 1/2 cup milk
  • 1/3 cup olive oil
  • 1 egg

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease a muffin tin with butter or line with baking cups.
  3. In a medium bowl combine oats, flour, sugar, baking powder, baking soda, cinnamon and salt. Mix well.
  4. Add dry ingredients to cranberry mixture. Stir until well blended.
  5. Fill muffin cups 3/4 full.
  6. Bake for 20-25 minutes, until a toothpick inserted comes out clean.
