Roasted Baby Beets and Potatoes

  • 2 cups baby beets, halved
  • 2 cups potatoes, halved
  • 1 bunch green onions, chopped in 1-inch pieces
  • 6 garlic cloves, peeled
  • 1/4 cup olive oil
  • 3 tablespoons rosemary, fresh or dried
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper


  1. Preheat oven to 400 degrees.
  2. Toss all of the ingredients together in a large bowl and spread evenly on a baking sheet.
  3. Roast for about 45 minutes, or until beets and potatoes are fork tender.
