Apricot-Ginger Glazed Salmon
Guess what! This is almost the exact same recipe as the Plum-Soy-Ginger Roasted Pollock, with a few substitutions and additions. Replace the plum jam with apricot jam. Add about 1 tablespoon of fish sauce to the glaze.
Romaine & Arugula Salad with Corn, Avocado and Honey-Mustard Dressing
Chop and rinse romaine, and try to harvest arugula from the garden or find it at a farmers market. Shave corn kernels off a freshly cooked cob (though it’s not in season, read about buying the right corn and cooking it under “more specific cooking methods“!) Add chopped avocado. Whisk together 1 tablespoon of honey, 1 tablespoon of Dijon Mustard (Grey Poupon is a good option), 2 tablespoons of olive oil, 1 teaspoon of salt and a few fresh grinds of black pepper. Dress and devour!
Rosemary & Olive Oil Crispy Potatoes
Scrub the peels of about four potatoes – any kind but sweet potatoes – and cut into small (about 1/2 inch) cubes. Add about two tablespoons of olive oil to a large frying pan. Stir in a teaspoon of sea salt and as much dried (or fresh) rosemary as possible! Stir the potatoes a bit for the first five minutes and then let them sit spread out on the pan to get crispy. Stir occasionally. Continue until potatoes are fork tender and crispy; about 20 minutes.
