The food at Pousada de Portugal, Palacio de Estoi is phenomenal. Every spread is prepared with tender care, bold flavors, and dazzling presentation.

Take the breakfast buffet, for example. Overflowing bowls of fresh fruit, a medley of fresh juices and preserves. A selection of cured meats and cheeses, paired with various breads and spreads. The standard too: eggs, bacon, rich coffee and warm milk.

Lunch is celebrated with fresh salads of vegetables and beans, quiches and savory tarts and pies, fresh fruit, biscuits and tea. My favorite dish so far has been a sun-dried tomato and fava bean salad with mint. A refreshing and intriguing combination.

Dinner a la carte one night was as follows. Thankfully, our group is inclined to dine family-style, which is a boon to any adventurous eater and reduces the chance of indecision.

My favorite. Delectable! Poached green apple with aged goat cheese, toasted walnuts, and a balsamic reduction.

Just to taste. Rabbit Terrine on crostini with olive oil. Great but hearty. This was shared in bite-sized morsels.

I save this for last, the least extraordinary dish (likely due to the preceding flavors). Poached salmon in a saffron-butter sauce with spinach tagliatelle and julienned vegetables. Missing: salt.
