Watermelon Soup

Prep Time: 10 minutes

Ingredients

  • 3 cups diced watermelon
  • 2 tablespoons green tips of spring onions
  • 1 1/2 tablespoon fresh lemon juice
  • 1/4 teaspoon grated ginger
  • 1/4 teaspoon minced jalapeno, or more for taste
  • 1 tablespoon plain yogurt or sour cream
  • 1 tablespoon olive oil
  • salt & pepper to taste
  • thai purple basil (optional)

Instructions

  1. Add it all to a blender and liquefy until! Keep it in the blender and cool in the refrigerator before serving. You can pulse quickly in the blender for a frothy head. Scatter purple thai basil on top, and a dollop of yogurt to taste!
