Roasted Baby Beets and Potatoes
- 2 cups baby beets, halved
- 2 cups potatoes, halved
- 1 bunch green onions, chopped in 1-inch pieces
- 6 garlic cloves, peeled
- 1/4 cup olive oil
- 3 tablespoons rosemary, fresh or dried
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- Preheat oven to 400 degrees.
- Toss all of the ingredients together in a large bowl and spread evenly on a baking sheet.
- Roast for about 45 minutes, or until beets and potatoes are fork tender.
